In my opinion, this is the most brilliant way to enjoy the roast beef.
It doesn't need to be coocked in the oven so it's fast and what we get, are a juicy, tender, tasty slices of beef.
Actually, it's my father's recipes, who is a great cook!
It doesn't need more than 30 minutes, so it's ideal if you don't have so much time.
As is pictured, is the way I like it: Rare. Of course you can choose how much to cook it, but in this way, it keeps a wonderful tenderness.
ingredients for 4 people
As first, you need to season the beef with a generous amount of salt and pepper, all over it. Then make a couple of holes in the meet with a knife and put in a pinch of salt, a half clove of garlic and a few rosemary leaves in each hole.
Heat a pot with a generous dose of olive oil, half crushed garlic clove and the spring of rosemary. When it is hot put the beef inside.
Now with a middle high flame, keep turning the meat in order to brown the surface evenly.
After that add the cutted mushrooms, the wine and when it's completely faded, turn down the flame, cover the pot and cook at low flame for 20 min. circa
Add some more salt and pepper for seasoning the mushrooms and check, stir and turn the beef every 5/6 minutes. To check if the beef is ready, stick a fork into the beef: if no blood comes out, it' ready!
Cut it in thin slices and it's now ready to serve.
